Biryani masala


Biryani masala is a mixture of whole spices which is ground into a powder. It is used in making biryani – vegetable biryani or non veg biryani. You can use it for pulaos or in any kebab dish. In my biryani masala, I have used quite different spices of my taste. It gives you a good flavour. You can add your own spices too.


Murg makhani / butter chicken


Butter chicken (murg makhani) is an appetising, mouth-watering and popular dish in India and abroad. Butter chicken is available in every restaurant in India and in Indian restaurants in other countries. Whenever we go to restaurants with friends or families, butter chicken will be ordered every time with naan. Butter chicken is best served with naan or roti (chapathi, phulka).


Tandoori chicken masala


Tandoori chicken masala is very popular in the UK like chicken tikka masala. I have prepared this dish with tandoori chicken pieces. The creamy texture blended with aromatic spices and tomato sauce goes well with tandoori chicken pieces. I have pretty much used the same ingredients as for tandoori chicken and butter chicken. The only difference being that I have used tomato passata to prepare the sauce.


Authentic tandoori chicken (restaurant style)


The authentic tandoori chicken is not only popular in India, but almost everywhere in UK, USA and other countries. Tandoori chicken is so delicious and even mouth-watering when we see the marinated chicken displayed in the restaurants. In Bangalore and Delhi I have seen them hanging in tandoor skewers – red in colour and displayed in an enclosed glass area, which is kept outside to attract the customers.
