Mango pudding

Mango pudding is a great dessert for Mango lovers. It is smooth, creamy, silky and most importantly full of mango flavour. The best part is that it is very easy to make. I have used fresh alphonso mango for this mango pudding and another ingredient to highlight is coconut milk. I have used vegetarian gelatine powder. I have also used cream with the coconut milk to make it richer. Mango and coconut milk go very well together and make this dessert all the more exotic. The dessert becomes vegan by just avoiding cream and instead using more of coconut milk

Mango mousse

Mango mousse is a quick dessert for mango lovers and quite easy to prepare with just three ingredients. You will not find mango mousse easily in supermarkets but can be made easily in a few minutes with tinned mango puree or fresh mango when in season. If I want to prepare any fruit dessert, my first choice will be mango as it is one of my favourite fruits and only available for a few months in a year.

Roast chicken with cranberry stuffing

Roast chicken is a fabulous family treat for everyone, whatever the occasion or celebration is. One of my son’s favourite dishes has to be roast chicken with roast potato, lots of gravy and Yorkshire pudding – enough to make him happy on that day.


Guacamole is a Mexican dip made with avocado. The perfect guacamole requires using ripe avocado. The ripeness of the avocado can be known by just pressing the outside of the avocado. A ripe avocado skin will be a mixture of dark green and brown colour. You can use Serrano chillies or jalapeno chillies or like me, any mild chilli. For making guacamole, pestle and mortar are necessary, but you can also use fork or the back of a spoon to mash the avocado.

Crème caramel

Crème caramel or caramel pudding is a French dessert that is loved all over the world. It is a delicious custard based dessert with soft caramel on top. To make crème caramel, sugar syrup is cooked to a caramel stage and is poured into the mould or bowl before adding the custard base. When the caramel is set, custard is poured and oven cooked in a water bath. It is turned and served with the caramel sauce on top. It is a very easy dessert to prepare, once you master the art of making caramel.

Bread and butter pudding

Bread and butter pudding is one of those old fashioned English recipes, very popular in British cuisine and everyone loves it. Bread and butter pudding is an easy-to-make pudding. It is made by layering buttered bread, topped with egg custard and then scattered with raisins and seasoning. Day-old bread works best. The cinnamon and nutmeg is a lovely addition to this classic pudding. You can prepare bread and butter pudding with baguette, brioche and croissant.

Roast chicken

Whole roasted chicken, the name itself makes me so appetizing and feel hungry. In London and other western countries, it is a special feast (apart from other meats) on Sunday or any time, every ones favourite, whenever family desires, as all the family members will be at home . A family feast and delicious lunch supper, what else you need to enjoy with chicken, roasted potatoes, with boiled baby carrots and gravy made after scraping the left over in the tray with the chicken fat and adding chicken stock or water and flour for thickening.

Lemony Roast chicken

Whole roast chicken, seems easy but it has to be cooked properly and the chicken has to be juicy from inside. There are so many ways to roast a whole chicken with different herbs. This time iam sharing with you a very wonderful, fragrant and full of aroma and delicious lemony flavoured chicken with dry Italian herbs and with special ingredient lemon salt, if not available just add fresh lemon juice and with more dry herbs. I always like my chicken to be marinated well not with a very light marinade.

Watercress soup

Watercress soup is one of the most favourite soups. Watercress soup I had for the first time in the watercress festival which was held near alresford town in Hampshire (uk) in spring time around April. In this festival, mostly used are watercress and used in varieties like watercress crepe, watercress soup, watercress beef burger and many more.

Strawberry cheese cake

Cheese cakes are two types one is baked and other is no baking. Like mango cheese cake, I made strawberry cheese cake also to see the taste and it was delicious. But I prepared it in 2 ways, one is with the equal amount of any soft cheese or Philadelphia cream cheese and whipped cream and the other strawberry cheese cake prepared like mango cheese cake, but for the glaze I just cooked strawberry puree and sugar for few minutes, until sugar is melted.

Mango cheese cake (no baking)

Mango cheesecake is my favourite cheesecake. You don’t have to wait for the mango season but can make on any occasion or any time you desire. Simple cheesecake is a dessert consisting of one or two layers. The base or the bottom consists of a crust made from Graham crackers or tea biscuits or cookies. The main layer or the middle layer consists of soft cream mixture made from a soft cheese and cream. The top layer can be a jelly-based glaze but is optional.
