Ghee or clarified butter is used in many Indian dishes. Ghee is a vital ingredient in Indian sweets and is used in biryanis, pulavs, fried rice and also in breakfasts like idli, sambar, pongal, upma, ghee roast dosa and other dishes. By adding ghee to any dish, the dish can be enhanced with extra flavour and taste. Homemade ghee is fragrant and gives extra richness to any dish.
Biryani masala is a mixture of whole spices which is ground into a powder. It is used in making biryani – vegetable biryani or non veg biryani. You can use it for pulaos or in any kebab dish. In my biryani masala, I have used quite different spices of my taste. It gives you a good flavour. You can add your own spices too.
Ginger and garlic paste is a very important ingredient in Indian cooking. You can make it in advance and refrigerate for even a month. You can make it in smaller quantities also. There are other ingredients which you can add in the ginger and garlic paste, like corrainder leaves, cloves any whole spices you like. This will be helpful in making chicken gravies or any Indian gravies as there will be flavour in it and it gives the extra taste and flavour. If you want, you can avoid the whole spices.
