Khao soi or khowsuey (Burmese coconut noodles soup)

Khao soi is a Burmese soup; it is called as ohn no khauk-hswe  means coconut milk noodles. Eaten with condiments like chilli sauce, a squeeze of lime, sliced shallots, fried shallots, fried garlic, crispy fried egg noodles. This soup was influenced in northern part of Thailand and also in India but they prepare it as per their taste.

Shingara samosa

Samosa is a fried pastry with mild or spicy or sweet filling. Phul kopir (cauliflower) samosa is a famous Bengali snack. In Bengal, samosas are called shingara. Shingara is smaller in size and just 2 to 3 bites only like as we get those small mini onion samosas in Chennai near marina beach or busy markets or sometimes in a tea shop and also in Hyderabad both vegetarian and non – vegetarian in Irani or Muslim’s restaurant’s. The filling for shingara I have used is cauliflower and potato mixture with nuts and few spices.

Mango rice

Mango rice is also known as manga sadam in Tamil and maamidikaaya annam or pulihora in Telugu. Pulihora means sour rice; it can be lemon rice or tamarind rice or mango rice. Mango rice is made with raw mango. Raw mango rice is easy to make like lemon rice. Whenever mango season comes mango rice, mango pickle, mango chutney and many more is made with raw mangoes. I love food which is sour, tangy and spicy, so I have added raw mango as per my taste.
