Prawns fried rice with fish sauce

Prawns fried rice with fish sauce is different from other fried rice as in this I have not used any soya sauce and eggs also. In this fish sauce is added and some vegetables, you can add any vegetables which you like. With the same ingredients you can make chicken fried rice also. I have used small prawns and which is already boiled. This is very easy to make and gets cooked fast, if you chop the vegetables and keep it aside.


  1. Oil – 3 tbsp
  2. Carrots – 3
  3. Mushroom – 10
  4. Capsicum – 1
  5. Spring onions – 2 or ½ cup(chopped)
  6. Prawns (boiled) – 180gms
  7. Fish sauce – 3tbsp
  8. Chinese salt – 1/2tsp or 2 big pinches
  9. Chicken cube – 1
  10. Pepper powder – 1tsp
  11. Green chilli – 4(slice, cut)
  12. Salt – optional
  13. Rice (basmati) – 11/2 cup (uncooked)


  1. First chop all the vegetables as per your taste, chop it finely or slice it.
  2. Cook the rice in advance itself and keep it aside.
  3. Cooking rice

  4. Wash the rice properly and soak it in water for 1/2hr.
  5. Boil 3cups to 31/2cups of water, pour rice and salt as per your taste, and let it cook for few minutes, do not close the lid.
  6. When the water is absorbed and you can see that rice grain size has become longer but still raw and you can see holes type forming in the rice, at this stage simmer it and close the lid.
  7. Cook for 8 to 10min and then switch it off.
  8. Let the rice be cooled and with the help of a fork can separate the grain of each rice. Fluff it up with a fork and serve it in a plate.
  9. You can cook the rice according to your method and let it cooled down.
  10. If you have rice in the fridge which is better, can use it.
  11. Fried rice

  12. Heat oil in a wider vessel or kadai or wok, when it gets warm add carrots and stir fry for 2min, then add all the remaining vegetables including spring onions and stir fry till it is cooked but still crisp.
  13. After 3min, add chicken cube, which is crushed with a spoon and add prawns, mix well, and see that no water is there in prawns.
  14. Now add fish sauce, sprinkle pepper powder and Chinese salt and mix well. Cook for 2min.
  15. After stirring it well, add rice and reduce the flame, so that it is not burnt.
  16. After mixing the rice, add few spring onions and mix well.
  17. Let the rice cook for 3min to 5min, so that rice is infused with all favours, stir it well, till it is ready to serve. Switch it off.
  18. Serve it with any Manchurian or any dish you like.


  1. You can add cabbage and beans also.
  2. The rice has to be cooked in advance and kept cool. if you have rice in the fridge, it is better to use it.
  3. You can use chopped ginger and garlic also.
  4. When rice is added and mixed well , it is served immediately, but I always keep it for simmer 3min.
  5. If using raw prawns, then fry it in a kadai prawns first, then add vegetables and cook as above given.
