Coconut milk rice

Coconut milk rice goes well with any thai curry well or can be served with our Indian dishes too. Can prepare with ordinary rice or basmati rice too. It is easy to prepare and a simple dish.

Ingredients

  1. Rice (sona masoori) – 1 cup
  2. Coconut milk – 2 1/2 cups
  3. Lime skin (grated) – 1 tsp
  4. Ginger – 1/2 inch piece
  5. Coriander leaves (chopped) – 2 tbsp
  6. Green chilli – 1
  7. Salt as per taste

Method

  1. Take a vessel, place rice, coconut milk, and other all ingredients in the vessel.
  2. Cook on high heat or medium heat; stir the rice in between from sticking to the bottom.
  3. Once the coconut milk starts bubbling and the rice has absorbed the milk almost, can see holes in the rice, but still moisture and liquid is there, reduce the heat to low and close the lid.
  4. Cook till the rice is cooked, it will take 12 to 15 mins.
  5. The rice has absorbed the entire liquid and fluffy and cooked well.
  6. Serve with any curry you like.

Notes

  1. If the rice is uncooked but there is no liquid add more coconut milk and cook.
  2. Basmati rice gets cooked fast but ponni or sona masoori(name of the rice), it will take time, so add coconut milk as per the rice required.
