Chicken lollipop with tangy chilli sauce

Chicken lollipop is every ones favourite dish; it is eaten as a starter. Chicken wings are used for chicken lollipops, which are shaped in the form of chicken lollipops. I have tried so many variations, and I liked all and I am confused to tell which one was more tasty and crispier. In this I have used chicken wings, which are in the form of chicken lollipop but not trimmed properly as a chicken lollipop, it looks like mini chicken legs. You can ask your butcher to do or can do it by yourself. In this recipe I have used breadcrumbs, to make it crispier, I have used 2 or 3 bread slices and grounded them in a mixer or food processor to get bread crumbs form. In this I have made sauce also which goes well with it, you can make sauce according to your taste. In my previous Chinese recipes, you can take any method of making sauce and just pour on it or drizzle on it, and serve as a starter or with any main course also.

Ingredients

  • Chicken - 350 gms or 6 wings
  • Marinade

  • Soya sauce - 1 tsp
  • Vinegar - 1 tsp (optional)
  • Chilli sauce - 1 tbsp
  • Ginger and garlic paste - 2 tsp
  • Salt - as per taste (optional)
  • Chilli powder - 1 tsp
  • Ajinomoto (Chinese salt) - a pinch
  • Pepper powder - a pinch
  • Batter

  • Corn flour - 2 tbsp
  • Maida - 2 tbsp
  • Chilli powder - 1/2 tsp
  • Ajinomoto - a pinch (optional)
  • Pepper powder - 1/4 tsp to 1/2 tsp
  • Soya sauce - 1 tsp
  • Salt - as per taste (optional)
  • Colour - a pinch (optional)
  • Egg - 1
  • Coating

  • Fresh bread for making bread crumbs - 3 slices (Grind it dry in a coffee grinder or any spice grinder)
    OR
    Ready made bread crumbs
  • Sauce

  • Oil - 3 tsp
  • Spring onion white and green parts (chopped) - 1/3 cup
  • Garlic (chopped) - 2
  • Chilli powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Sugar - 1/2 tsp
  • Vinegar - 3/4 tsp
  • Salt - as per taste
  • Tomato ketchup - 1 tbsp
  • Soya sauce - 1 tsp
  • Ajinomoto - a pinch (optional)
  • Chilli sauce - 3 tbsp
  • Water - 1/4 cup

Method

  • Chop the spring onions and garlic finely and keep it aside.
  • Marinating and frying

  • Take a bowl, put all the ingredients for marinade and mix well. Check the seasoning. Be careful while adding salt as soya sauce has a good salt content.
  • Add chicken lollipops into it and mix well. Refrigerate for 1 hour.
  • Take the chicken out of the fridge half hour in advance before frying.
  • Mean while make a batter, first add all dry ingredients in a bowl and mix well, then add egg and other ingredients and mix well, mix it with a fork. It should not be a very thin batter, no need to add water. If it becomes thin add more corn flour. Let the batter rest for 10to20min.
  • Coat each piece in the batter and then coat it with breadcrumbs and keep it ready for deep frying.
  • Heat sufficient oil and when it is hot, place chicken lollipops in the oil very carefully and fry it on medium heat, it will take 10 to 12min or less also, cook it till the chicken is cooked well. Never fry the chicken on a very high heat. Otherwise it will become soon dark and from inside it will be not properly cooked.
  • Drain it on a kitchen paper and keep it aside.
  • The colour of chicken lollipops is bit dark as seen in the picture, its because of chilli sauce and I fried it more than 12min, but you can remove the chicken lollipops as soon as it is cooked.
  • You can serve it immediately without the sauce also, just wrap or cover the end of the chicken bone with aluminium foil as it is served in hotels.
  • For the saucy chicken lollipops

  • Put oil in a preheated pan, when the oil is hot add garlic, spring onions stir it for few seconds.
  • Now add all sauces and powders one by one, mix well, stir continuously, so that it is not burn, add water and stir it, let it cook for few minutes till the rawness of chilli and other ingredients is gone and a thick saucy consistency is formed. It will not take more than 5min, check the seasoning.
  • If the water gets dry add little more water and make the sauce consistency. Switch it off. Taste and see, whether it has to be cooked still or not.
  • Serve this sauce with chicken lollipops or drizzle the sauce on chicken lollipops and eat it.
  • Spicy and tangy sauce with crispy texture chicken, it goes well, try it.

Notes

  • If you want can avoid the coating of bread crumbs, just fry it directly by coating it with the egg mixture batter only.
  • You can omit Ajinomoto if you want or just add in any of those in marinate or sauce.
  • Can add chopped green chillies and chopped onions also in the sauce. Can alter with chilli.
  • Can make any sauce of your taste like chilli sauce or Manchurian sauce.
  • Do not turn the chicken pieces quickly, otherwise coating will come off. Do not stir it with a spoon often.
  • While making sauce you can add chopped ginger, garlic, curry leaves, chopped onion and then the remaining ingredients in the sauce and make it, it will give you different taste.
