Chicken and prunes biryani


Chicken Biryani with potato and prunes (alu bhukhara) or dried plums is very unusual and different for us. In my Biryani recipes, I have used dry fruits and nuts but never tried with potatoes and alu bukhara (dried prunes). I tasted this Biryani in london in a pakistani restaurant near my place and I was surprised to see that dried prune, which was giving me sweat and sour taste, I thought it to be tamarind, because of its sourness and having a similar seed like tamarind and in dark colour.


Bai biryani (Chennai style)


In Chennai (Tamil Nadu) Bai Biryani means Muslim style Biryani. Most of my friends and others may not know about bai biryani, for them one more delicious biryani, which tastes delicious and you will feel not to stop but just keep eating this biryani. Iam myself a big biryani lover and favourite one is the biryani which is served in Muslim marriages and served in small shops just for the take away only.


Ambur chicken biryani


Ambur biryani one more very famous and popular biryani from Ambur in Tamil Nadu . Most of my friends may not be knowing the Ambur biryani , as they are mostly familiar only with Lucknowi (Awadh) and Hyderabadi dum biryani. But for the motorists, those who travel through Chennai to Bangalore highway will be known about this famous star biryani, who prepares delicious, scrumptious and mouth-watering Ambur biryani.


Sindhi biryani


Among other famous biryani, there is one more famous biryani known as Sindhi biryani from Sindh, Pakistan and few places in India. I tasted this delicious biryani in a restaurant (uk) and one of my friends house. Each one prepares Sindh biryani as per their recipe. This biryani is entirely different from the famous Hyderabadi biryani and Lucknowi biryani.


Bombay chicken biryani


Bombay chicken biryani is a famous and incredible biryani from Mumbai. I tasted the Bombay chicken biryani first time in one of my friends house. It was delicious and words cannot describe the taste. I was delighted because the biryani was spicy, sour and even sweet because of plums (alu bhukhara). It tasted very delicious and was entirely different from our usual biryani as it has potato, chicken and alu bhukara (dry plums).


Lajawab chicken biryani


Lajawab chicken biryani means unequalled or incredible taste in biryani. This chicken biryani when eaten at my home, only one word comes lajawab, incredible taste which is from my home which is very delicious and tasty, made with simple spices and easy to cook. I have eaten this chicken biryani from my childhood and iam sharing this chicken biryani with you. This chicken biryani is made by grandma, passed on to my mother and now it’s me who is preparing for my family.


Hyderabadi chicken dum biryani


Hyderabadi chicken Dum Biryani is one of the most popular biryanis in South India. Chicken Biryani is one of the most popular Indian rice recipes all around the globe. Chicken marinated with spices overnight and cooked on dum with 50% precooked basmati rice, which gives wonderful aroma and taste to the Hyderabadi chicken biryani. The chicken gets the direct heat from the flame and the rice is cooked with steam inside, the method of cooking, also known as Dum method.

The method I followed for this recipe is pakki biryani (meat is pre-cooked, rice is layered on top and cooked).

Biryani was brought to India by Persian travellers and merchants. This dish is not only popular in India, but also in Iraq, Iran, Pakistan, Srilanka and Mauritius. In every house, the making style and spices used are different. Biryani can be made with prawns, chicken, mutton, vegetables and even fish. I learnt this biryani from my Mom, which I am sharing with you.

Tandoori chicken biryani


After seeing this on one of the restaurant menus, I thought I will try preparing this tandoori chicken biryani. In restaurants, now-a-days, we get all varieties of biryani – Mughal and Tandoori style – both with chicken and tiger prawns. Preparation of these are the same and only the spices differ. It is up to you whether you want to make a really spicy or less spicy biryani.
